How Are You?

Hello everyone, I haven’t done a blog post in a little while as i’m sure you all are in the same position too of juggling; teaching, working from home, housework etc…

I go to the supermarket and I can still hear; “Mum”, “Can I have a snack”, “I need the toilet”, “I’m hungry”, “Can I have a drink”, it’s embedded in my brain!!!!!!!!!!!!!!!

I just wanted to check in and see how you all are? It’s been like a rollercoaster hasn’t it, I don’t know if you’re the same but one minute i’m up next minute i’m down – it’s crazy! I really think when the weather is warm outside, it totally helps and lifts my mood – are you the same?

Whilst being off i’ve spent so much more time with the kids and it’s been really lovely. Sometimes we get that indulged in work and life; family time is reduced to just weekends and even then housework and catching up on things you couldn’t get done through the week because of work has to be done on a weekend! Finding that balance is tough and even though we have been in Isolation for 6+ weeks now, I feel like i’m only just finding the balance of the new life and that’s going to get rumbled very shortly when we’re starting to go back to normality (whatever that is).

Trying to keep positive I have set myself some goals during lockdown and i’ve managed to learn how to make homemade bread, pizza’s and i’ve even started doing hinchlists and actually sticking to them. I know they aren’t for everyone and i’ve only just started doing them, but I actually think it keeps me on the right track for things that need doing & gives me more motivation and a kick up the a*** that I generally need these days. I’ve had a few days where i’ve just sat there and thought I actually don’t want to do anything at all today & have been really unmotivated so these lists are defo helping!

One thing i’ve always tried doing is getting more organised but I find the actual organising part, going through everything, to be so time consuming but once it’s done it saves so much time and it’s much easier to find things! So this has been one of my tasks too for before we go back to normality! It’s all in the plan of just trying to make things easier! Some people probably thing i’m mad for it, but if it helps my day to day life i’m game for absolutely anything!! I share all my tips and tricks on my Instagram to help others! Check them out! I always try and be as “real” as I can by showing before photos, my house is not perfect by far but if I can help someone else while i’m sorting my S*** out along the way then I will try my best.

LEMON DRIZZLE LOAF

You Will Need;

For the Cake Loaf

  • 225g Unsalted Softened Butter
  • 4 Eggs
  • 225g Self-Raising Flour
  • 225g Caster Sugar
  • Lemon Zest

For the Lemon Drizzle

  • 85g Caster Sugar you can use granulated sugar if you prefer a crunchier texture
  • Juice of 2 Lemons

How To Make

Pop the oven on to warm at 150*

  • Soften the butter and mix together with the Caster sugar
  • Crack in the 4 eggs individually and stir in slowly and well in between each one
  • Sieve in slowly the Self-Raising Flour
  • Pop the grated Lemon Zest into the Mixure
  • Pour into the Loaf Tin ensuring it’s well greased with butter or grease proof paper
  • Place in the oven for 35-45 mins, keep checking at around 35 mins as you don’t want to dry it out

For the drizzle

In a pan pour in the Lemon Juice and Caster Sugar together and pour directly over the cake when the cake is cooled but ensure the lemon drizzle is warm!

EASTER CARD MAKING

We had lots of fun today making Easter Cards, we might not be able to give them to anyone but we will send pictures of them to our loved ones.

I love this little crafty hack with empty Toilet Rolls, to make a bunny shape! It’s really easy and something fun to do for the kids independently.

THINGS TO DO INDOORS

There are so many things we can all do indoors! Here’s a few ideas below, please feel free to download and print my checklists to use or share them to your friends & family who you feel may find them beneficial…

EASY BAKE FLAPJACK

  • 100g Plain Flour
  • 350g Butter
  • 4 TBSP’s Golden Syrup (or more for a sweeter tooth)
  • 400g Oats
  • 350g Caster Sugar
  • Pop your oven on to warm at 150*
  • In a large pan add the Caster Sugar, Butter & Golden Syrup and melt on a low/med heat
  • Add the Oats & Flour slowly stirring the mixture altogether
  • Place Grease Proof Paper into a baking tray & add the flapjack mixture
  • Put this in the oven for 30-40 minutes, less for a gooey consistency and more for a firmer crunchy flapjack!
